1. Bring water and lentils to a boil; simmer lentils for at least 10 minutes, then add in instant mashed potato mix 1:3 (potato to water ratio). 2. Meanwhile, saute onion and veggies in oil (can add more variety of vegetables if desired).
3.When lentils + mashed potatoes are prepared, mix in the cooked veggies, cheese, sundried tomatoes, and any seasoning. Garlic powder is key! Add Italian seasoning as desired.
*Can switch out powdered cheese for backpacking if desired. Additional option: Leave out lentils, add more mashed potatoes to reduce cook time.
*To make vegan, leave out the cheese but season with bouillon cubes!
