1. Cook Quinoa and Lentils in pot for 10 - 20 minutes (start lentils first, need slightly longer).
2. Strain excessive water until it looks saucy & add coconut milk, curry, and ginger.
3. Add cashews & tofu to warm. Add cut up pineapple and coconut near end to warm up and soften slightly.
cashews, and turmeric.
3.Cook for 5-10 minutes, adding pineapple near end to warm/hydrate. 4.Add coconut flakes and serve.
