General
1. Using a 1:1 ratio, bring water to a boil. Stir in instant rice, cover with a lid and remove from heat.
2. Warm a few tablespoons of oil in a pot. Add onion and saute until fragrant.
3. Add in the rest of the vegetables and mushrooms and saute until they're soft.
4. You can cook the tofu in it's own pot, or combine with the veggies for less dishes :)
5. Add in stir-fry sauce and mix until thoroughly coated.
6. Serve the sauced veggies over rice.
