Quinoa Pilaf


Ingredients

Ginger (fresh)
0.5 teaspoon(s)
Garlic (cloves)
0.5 whole
Veggie soup mix (dried)
0.25 cup(s)
Quinoa
0.375 cup(s)
Nuts
0.5 cup(s)

Recipe Instructions

1. In a saucepan, heat some oil over medium heat and add 0.5 teaspoon of fresh ginger and 0.5 whole garlic cloves, minced. Cook for 1-2 minutes until fragrant.
2. Add quinoa to the saucepan and toast for about 2 minutes, stirring frequently.
3. Stir in dried veggie soup mix and water. Bring to a boil. (1:2 quinoa to water ratio, though you can be generous with this since the dried veg will soak up some water too)
4.. Reduce heat to low, cover, and simmer for 15-20 minutes or until quinoa is cooked and liquid is absorbed.
6. While the quinoa is cooking, toast nuts in a dry skillet until lightly browned and fragrant (if you have one).
7. Once the quinoa is cooked, fluff it with a fork and stir in the toasted nuts.
