1. Mix pancake batter in a bowl according to the packaged instructions
2. Slice peppers and onions
3. On one skillet, add peppers and onions to warm oil and saute
4. Add eggs to the sauted peppers and onions
5. On another skillet, first warm pan and then add oil before pouring in the pancake batter
6. Cook pancakes until they're golden brown on each side
7. Serve pancakes with maple syrup and berries
8. Serve eggs & veggies with salsa on the side
