1. In a pot, bring dried lentils and water to a boil and simmer for 15-20 minutes. For every cup of lentils, add 1 cup of water.
2. In another pot, bring water and rice to a boil. For every cup of rice, add 1 cup water. Once water is boiling, remove from heat, and keep the lid on until ready to serve.
3. Chop broccoli, bell pepper, whole carrot, and whole onion.
4. In a separate pan, sauté the chopped vegetables & tofu in a little oil until slightly softened.
5. Once the lentils are mushy and soft, add coconut milk powder, curry, and sauted vegetables.
6. Lentils can be served ladled over the rice, with coconut flakes & sriracha on the side.
