Recipe Instructions

1. Using a 1:4 lentils/rice to water ratio, bring water to a boil and add lentils and rice and stir.
2. Add diced carrots, and cover with a lid and simmer on low for 15 minutes.
3. After 15-20 minutes, check the consistency of the lentils to determine if more water and cooking time is needed.
4. If lentils are cooked through and soft, stir in the seasonings and serve with balsalmic and crackers.
