General
1. Cook minute rice in water (1c. rice to 1c. water).
2. Slice or dice onions and bell pepper.
3. Sauté onions and half of the bell peppers in olive oil for 5 minutes.
4. Add beans and sauté for about 2 minutes.
5. Add spices/seasonings and stir on low heat for 2 minutes.
6.Dice tomato, avocado, cilantro and remaining peppers.
7. Serve all ingredients buffet style to build burritos.
