Recipe Instructions

1. Cook rice noodles, strain, and set aside.
2. In separate pan, saute cut up carrots, broccoli, and minced garlic until fragrant.
3. On low heat (!), add water, soy sauce, powdered peanut butter, coconut milk powder, brown sugar, curry powder, ginger to the veggies and mix until sauce. Consider adding up to 7 tbsp of olive oil to make sauce more smooth and hearty.
4. Add cut up tofu.
5. Serve noodles with veggies & sauce on the side, and peanuts and lime to top.
