1. Bring water to a boil. Stir in rice, add a lid, and remove from heat (1:1). 2. In a separate pan, sautee onion, garlic, zucchini and tofu in oil (or other chosen veggies).
3. Add soy sauce, ginger pow, coconut milk, and peanut butter to the sautee pan (add some water if needed to help make the sauce).
4. Sprinkle with peanuts for crunch.
