Dice onion and carrot and saute in vegetable oil.
Bring a pot of water to boil. Add Ramen noodles for 1 minutes (do not fully cook!) and strain immediately. Discard (or save) flavor packets.
Add vegetable oil liberally, and toss in Ramen noodles, turning frequently allowing noodles to fry and turn crisp. Add soy sauce and sriracha and mix. Break egg into noodles and stir as egg solidifies.
Serve hot!
