In a medium bowl whisk together the
6 tablespoons rice wine vinegar
3 tablespoons vegetable oil
3 tablespoons sesame oil
5 tablespoons creamy peanut butter
3 tablespoons soy sauce
3 tablespoons brown sugar
2 tablespoons minced fresh ginger root (or 1 tsp. dried)
1 1/2 tablespoons minced garlic
In a large bowl combine the veggies.
Add the dressing right before serving. But does taste good the next day too.
