1. Prep the ingredients: mince the garlic, dice the zucchini, chop the green chilis, dice the potatoes 2. Boil the potatoes but don't overcook. 3. In a large skillet, saute onions, garlic and spices in olive oil for 5 mins. 4. add zucchini and continue cooking 5 more minutes. 5. add diced potatoes and green chilies; cook until browned.
