Recipe Instructions

1. Bring water to boil in a pot. Add noodles and cook until soft. Drain and set aside.
2. In a large skillet, heat some oil over medium-high heat and add diced tofu. Cook until golden brown and crispy, then remove from the pan and set aside.
3. In the same pan, sauté sliced red bell pepper and broccoli florets until slightly tender.
4. Add coconut milk, peanut butter, soy sauce, and a splash of water to the sautéd veggies and tofu. Stir well to combine all ingredients.
5. Combine the sauce with the noodles or serve it separately.
6. Taste and adjust seasoning as needed, adding more soy sauce or peanut butter if desired.
7. Serve the Pad Thai hot, garnished with crushed peanuts on top.
