In large pan, sauté your ground beef until brown.
While beef is cooking, chop your vegetables including jalapenos. Gauge group spice tolerance before adding all diced jalapenos to soup. You can set them aside as a topping.
Once veggies are chopped, place in large pot. Sauté with oil. Begin adding spices. Cumin*, Chili powder*, cayenne, black pepper, salt, and garlic powder. *These spices are essential to classic chili flavor so don’t be afraid to go heavy with these spices.
Adding all beans (Drained!), tomato paste, corn, and diced tomatoes and mix. Add water as needed.
Continue to add spices to taste: Cumin*, Chili powder*, cayenne, black pepper, salt, and garlic powder.
Once beef is cooked, add to large pot. If you have vegetarians in group, either separate enough chili for them into a second pot before adding beef, or keep beef on the side.
Allow the chili to simmer for at least 10 minutes – adding more spices as needed.
Serve with tortilla chips, jalapenos, cheese, and sour cream and enjoy!
