Chop jalapenos, bell peppers, and avocadoes. Mince garlic.
In large skillet heat oil over medium heat. Sauté jalapenos and garlic until aromatic.
Stir in black beans, corn, uncooked quinoa, and vegetable broth. Season with: red pepper flakes, chili powder, cumin, salt and black pepper. (Quinoa need 2c water or broth:1c quinoa, just like rice)
Bring quinoa mixture to a boil and cover skillet with lid. Reduce heat to low and simmer until quinoa is tender and liquid is mostly absorbed ( Approx.20 minutes)
Serve with avocado, sliced lime, and cilantro on the side and Enjoy!
