Dice potatoes and cover in cool, clean water. Boil for five minutes with salt. Let dry.
Dice onions, peppers (if using).
Heat a pan, or cast iron skillet. Add potatoes and cook for around 8 minutes. Once tender, add onions (and/or Bell Peppers if using). At this point, beat the eggs in a separate bowl.
Continue cooking for 3-5 minutes. Then, add eggs over potatoes and onions. Cook to preference.
Serve with salsa or sour cream.
