Clean the meat with vinegar and water. You can allow the vinegar remain on the meat for flavor.
Use a sharp pointed knife to drive slits into the meat to allow the seasoning to penetrate the
meat.
Mix together your Sofrito, chopper garlic, black pepper and olive oil in a separate bowl. Use ingredients to your liking and the amount of meat. (You can usually eye it the more the merrier I say)
Use your hands to massage the seasoning into the slits and over the meat. ( you can allow it to sit over night or bake it right away)
Use a broiling pan to bake at 350° for 4 to 6 hours the skin should be facing up. Cover the meat until fully cooked and uncover to brown as desired.
