Sweet and Sour Rice, Backcountry (JY, NOLS)

vinegar (white or cider)

Recipe Instructions

Instructions:
1. Put dry white rice in pot with twice the water (1 part rice to 2 parts water) ALONG with raisins, other dried fruit, salt and dried onion, if using. 2. Once water begins to boil, immediately turn down to low simmer, cover, cook 15 min.
3. Add nuts, curry powder, & pepper and fry in butter for 5-10 min.
4. For Sauce, mix 1 part water, 1 part vinegar, 1 part soy sauce, and 1 part brown sugar together.
5.Mix sauce into rice mixture and simmer to warm it all up.
6. Serve.

Note:
- Use tamari or gluten free soy sauce if desired.
- Can add satuéed veggies, tofu, or chicken.
- If nut allergies, don't add nuts.
- Use earth balance for vegans and dairy free.
