Recipe Instructions

Instructions:
1. In pot, add enough water to cook instant rice and refried beans. Bring to boil. Turn off once boiling. You want about 1 part water to 1 part beans +rice mixture.
2. Add instant refried beans mixed with instant Minute Rice in pot, stir well, cover & insulate until beans & rice are rehydrated.
3. In fry pan, heat oil and sauté onions (if using).
4. Beat eggs (or mix up Ovaeasy egg crystals with water), add & cook stirring regularly until scrambled. Add diced/shredded cheese to eggs when cooking, or add cheese to top of eggs at end.
5. Warm tortillas (optional) and fill. Top with optional sour cream, and salsa.

Substitutions:
- Do not use eggs, cheese, or sour cream for vegans.
- Use gluten free tortillas.
