Salmon Tomato Couscous, Backcountry (JY)


Ingredients

Tomatoes, sun-dried
1.5 cup(s)
Couscous, whole wheat or reg.
2.0 cup(s)
Salmon jerky, shredded
6.0 ounce(s)
curry powder
0.5 teaspoon(s)
salt
0.5 teaspoon(s)
pepper
0.5 teaspoon(s)

Recipe Instructions

Instructions:

At Home:
1. Place curry powder, salt, and pepper in a zip-top bag.


In Camp
:
1. Place the dried tomatoes in a pot and cover with three cups water.
2. Bring to a boil and cook for two minutes.
3. Remove from heat, add the couscous, stir, and cover.
4. Let sit for five minutes, or until all the water is absorbed.
5. Remove lid and stir in the curry powder, salt, pepper, and salmon. 



Note:
- Can add sautéd tofu, meat, or veggies if desired.
