Recipe Instructions

Rub the pork tenderloin with cajun seasoning and olive oil.
Dice the yams into 1-2 inch cubes, toss them with olive oil, salt & pepper and roast in the DO until tender or brown.
While yams are cooking, grill the pork tenderloin, taking care to not over or under cook. To serve, slice on an angle and drizzle with fruity bbq sauce.
Top with parsley on plate.
