Grill or saute pork chops. Quarter (or smaller) potatoes, cover with cold water, bring to a boil (add a good amount of salt to water), cook until potatoes are fork tender. Drain (reserve some potato water-great for dairy free and moistening mashers). Mash the potatoes, add butter, milk, reserved water if desired. If you have extra sour cream or cream cheese-that is a great addition. Thinly slice cabbage, grate carrots, sliced red peppers, drain & add corn. Mix together with the vinaigrette.
