Black Bean and Fake Meat Chili

Recipe Instructions

In a large saute pan add 2T olive oil and saute diced onion, quartered zucchini, quartered squash and garlic. After onions are translucent add cumin and chili powder, stir place in bowl and set aside.
In the same saute pan heat remaining T. of olive oil and brown ground meat substitute.
Place fake-meat and onion/garlic mixture into large stock pot.
Drain and rinse black beans and add to stock pot along with chicken broth, tomato paste, and salt and pepper to taste. (You can also add more chili powder if you wish).
Bring to boil then simmer for 30 minutes to an hour.
Add tomatoes and about 10 minutes prior to serving.
(Green chili is optional for heat)
Serve s. cream and cheese on the side for vegans
