Prep DO and coals. Saute the onions, garlic, tomatoes, and veggies with chili powder, cumin, and salt and pepper until it resembles a sauce consistency. Pre-toast the corn tortillas and cook chorizo. Layer the dutch oven with tortillas, sauce, beans, cotija, and chorizo. Each dutch should have about three layers. On top layer (end with beans), create egg pockets to crack whole eggs into evenly throughout. Cook until eggs are done.
