Frittata- Prep DO and coals. Mix eggs with a splash of half and half and salt and pepper to taste.
Saute shallots, mushrooms, olives, pesto paste, and a pinch of salt and pepper in oil in the intended DO. Add fresh spinach and cover with eggs. Cook until eggs are no longer jiggly or a knife runs through cleanly. Top with cream cheese (easier to spread if prepped in warm water), and decorate with cherry tomatoes, avocado, fresh sliced basil, and cracked pepper.
Vegan/Vegetarian: scramble tofu with onions, mushrooms and shallots, and basil paste (if Vegan or DF). Serve according to dietary restrictions
Cut smoked sausage into halves or thirds before cooking.
