Rice uses a 2:1 ratio of water to rice.
1. Turn on burner: high heat and In LARGE pot, boil approx 64 oz. water.
2. While heating water, chop veggies.
3. In MEDIUM pot on medium heat, add oil, chopped veggies, curry powder. Stir. Cook 2-3 min, then add approx 24 oz. water and high heat.
3. Once boiling, add rice to large pot and lentils to medium pot.
4. Reduce heat to LOW simmer, put on lid and cook for 20 minutes.
5. Add canned diced tomatoes to pot with lentils. Simmer on LOW 5 minutes (or until lentils are soft).
6. Add hot sauce if desired.
