1. Turn on burner: high heat
2. In LARGE pot, boil 72 oz. water.
3. While heating water, chop veggies.
3. In MEDIUM pot, add oil, chopped veggies, curry powder. Stir. Cook 2-3 min, then add 28 oz. water.
4. Once boiling, add rice to large pot and lentils to medium pot.
5. Reduce heat to simmer, put on lid and cook for 20 minutes.
6. Add canned diced tomatoes to pot with lentils. Simmer on LOW 5 minutes (or until lentils are soft).
7. Add hot sauce if desired.
