SOAK TEXTURED SOY PROTEIN AHEAD OF TIME IF POSSIBLE (use potable water, in ziploc or in cook pot).
1. Chop onion & bell pepper.
2. Turn burner on: HIGH heat.
3. In LARGE pot, boil 4.5 cups water.
4. Once boiling, add 3 cups cous cous & 8 oz. textured soy protein; reduce to LOW heat. Stir occasionally. Cover and cook 8-10 minutes.
5. Turn second burner on: MEDIUM heat.
6. In MEDIUM pot, add oil, onion, bell pepper, Italian seasoning, canned diced tomatoes & tomato powder. Stir & cook 2-3 min.
