Jamacian Jerk Mango Rice & Beans

Kidney Beans (dry)

Jamaican Jerk Seasoning
1.0 bottle(s)
Garlic Powder
2.0 teaspoon(s)
Bell Pepper (Fridge)
1.0 whole
onion (Fridge)
1.0 whole

Recipe Instructions

AHEAD OF TIME: soak the dried beans (in a ziploc while hiking, in a pot of water at camp, etc).

When ready to cook:
1. Turn burner on: high heat to boil water
2. Chop desired amount of dried-mango into bits.
3. Add rice, beans & mango to boiling water.
4. Bring to simmer (don't let it burn!)
5. Add Garlic Powder & Jerk Seasoning. Stir.
6. Separate pot: sauté onion & bell pepper
