Makes 10 servings
  • Rice Noodles (14 oz) 1.0 package(s)
  • Rice Noodles - Lotus Foods 8 oz (K, GF) 1.0 package(s)
  • Ginger Powder 5.0 teaspoon(s)
  • Garlic Powder 2.0 teaspoon(s)
  • Lime (Fridge) 2.0 whole
  • Bell Pepper (Fridge) 1.0 whole

Recipe Instructions

Additional ingredients:
Oil, salt, siracha, nutbutter, honey, peanuts (from GORP), chicken packets

1. Turn on burner: high heat
2. In LARGE pot, boil water.
3. While heating water, chop/slice veggies.
4. In MEDIUM pot, add oil & veggies. Stir & cook 2 min.
5. Once boiling, add noodles to LARGE pot and cook until noodles are tender but not mushy (4-6 minutes). Stir. NOODLES WILL TURN TO MUSH IF LEFT IN WATER FOR TOO LONG.
6. Into MEDIUM pot with veggies, drain MOST of the noodle water (leave 4-8 oz in LARGE pot).
7. In MEDIUM pot with noodle water & veg, add 5 spoonfuls of nutbutter, ginger, garlic, & salt. Cook medium heat 2-3 min. Stir.
8. To serve, take desired amount of noodles & sauce.
9. Garnish with squeeze of lime & peanuts; add siracha & a drizzle of honey to taste.

ALTERNATE METHOD FOR SAUCE:
Have individuals add desired amount of nutbutter, noodle water & spices to their bowls & mix to form sauce.

REMINDER: Noodle water can be saved for brushing teeth, etc.
