Prep: Cut up onions, and sweet potatos.
On Trail: In a fry pan, add onion and corn, and stir until onions are cooked.
2: In a sperate pot, add water and sweet potatoes, boil until soft. Add quinoa to sweet potatoes and red beans and green peppers to pot. Cook until beans are hydrated. Add onions and corn and spice mix to pot. Cook for another 5 minutes until all soft.
*Usually takes 45mins -1 hour to make meal.
