Put hash browns into saucepan; cover with 1 inch of hot water and rehydrate for 15 minutes. Drain off excess water. Melt butter into hot fry pan. Addhash browns (and some onion if you like). Cook, flipping occasionally, until crisp and browned. Stir in (or cover) with cheese, and remove from heat. Cover and allow to sit until cheese is melted. Add salt and pepper to taste. Good with hot sauce or picante.
Variation: Add ham or bacon bits to hash browns. Eggs optional, 1.5 per person
