Recipe Instructions

>Chop onion coarsely and peel garlic.
>Simmer the smoked turkey tails, onion, and garlic for one hour in a pot with just enough water to cover.
>Add greens and remaining seasonings on medium low heat for at least one additional hour, until the greens are wilt tender and turn a brown/olive color.
>Adjust seasonings as needed.
