>Chop/prep soyrizo, cheese, avocado
>Heat skillets over medium heat
>Add a drizzle of olive oil; add eggs and season with salt and pepper; stir often to cook evenly
>If cooking vegan eggs, cook in skillet with a little olive oil; cook about 5 minutes, flipping halfway through
>Add soyrizo to another skillet and cook for about 2-3 minutes
>Add beans to soyrizo, STIR and cook for another 2-3 minutes
>Toast tortillas, then pack them full of eggs and soyrizo/bean mixture; top with avocado and cheese/DF cheese
>Serve with cantaloupe
