Mince the serrano peppers.
Thinly slice the scallions and celery.
Coarsely chop the cilantro leaves.
Combine cabbage, celery, scallions, minced pepper and cilantro in large bowl.
Make the dressing by whisking lime juice with the honey and olive oil.
Pour over the coleslaw salad and toss well.
Taste for seasoning then adjust with more salt or fresh lime juice.
