Grate carrots. Dice onion. Rehydrate dehydrated bell peppers and mixed vegetables in hot water 10 minutes then drain. Drain chicken. Sauté onion and carrots in oil 3 minutes. Add rehydrated vegetables and peppers and cook 3 more minutes. Add chicken and heat through. Cook pasta separately, drain, toss with pesto, then add sautéed vegetables and chicken. Top with almonds and parmesan.
