Dissolve bouillon in 11 cups boiling water. Grate carrots. Heat oil in a large pot. Sauté onions and carrots until softened. Add dry rice and stir until golden. Add veggie broth, salsa, and black beans. Bring to a boil, cover, simmer 20 minutes. Fluff with fork, top with cheese. Note: Use Cheddar Cheese Powder as the substitute for trips longer than 4 days or in hot weather.
