Melt butter in parchment-lined dutch oven. Spread 1ΒΌ cups brown sugar over bottom. Arrange pineapple rings over sugar. Reserve pineapple juice. BATTER: Mix flour, baking powder, salt, and remaining 1 cup brown sugar. Rehydrate eggs in β cup water. Combine milk powder with 1 cup water, add egg, oil, vanilla, and reserved pineapple juice. Stir wet into dry until just combined. Pour batter over pineapple. Bake covered with coals 25β30 minutes until knife comes out clean. Flip onto serving dish.
