Best for layover days — falafel takes time. Mix falafel per package using cold water. Let stand 15 minutes. Heat oil ½ inch deep in a pan over medium-high. Shape falafel into small patties and fry 1–2 minutes per side until brown and crisp. Slice onion and shred cabbage. Stuff pitas with falafel, onion, cabbage, and tahini sauce.
