Rehydrate hash browns per package. Rehydrate eggs per package. Dice onions, grate carrots, and shred cabbage. Heat oil in a large pan over medium-high. Sauté onions and carrots 3 minutes until softened. Add cabbage and ham and cook 2 more minutes. Add hash browns and fry until beginning to brown. Pour egg mixture over everything and stir gently until just cooked through. Top with grated or sliced cheese. A hearty one-pan breakfast that makes great use of the fresh vegetables on hand. Note: Use Cheddar Cheese Powder as the substitute for trips longer than 4 days or in hot weather.
