PRE-TRIP PREP: Freeze sausage before departure. Parboil baby potatoes 8 minutes at home; cool and store in zip-lock bags in cooler. Cut bell peppers and onion ahead; store in sealed containers.
ON THE RIVER: Tear 8 large sheets of heavy-duty aluminum foil (about 18x18 inches each). In a bowl, toss sausage, potatoes, bell peppers, zucchini, and onion with olive oil, garlic powder, paprika, salt, pepper, and thyme. Divide mixture evenly among foil sheets. Fold foil into sealed packets (double-fold the edges). Place packets directly on hot coals or on a grate over campfire for 20–25 minutes, turning halfway, until potatoes are tender and sausage is caramelized. Serve from the packets. Pass hot sauce.
