PRE-TRIP PREP: Freeze cream cheese bricks before the trip. Allow to thaw in cooler for several hours before use.
ON THE RIVER: Beat thawed cream cheese with powdered sugar and vanilla extract until smooth and creamy. Crush graham crackers in a bag. Layer: spoon or pipe a dollop of cream cheese mixture onto each vanilla wafer; top with a small spoonful of jam or pie filling. Add a swirl of whipped cream and a graham cracker crumble. Serve immediately.
