PRE-TRIP PREP: Dice tomatoes and mozzarella; store in sealed container in cooler.
ON THE RIVER: Combine tomatoes and mozzarella. Drizzle with balsamic vinegar and olive oil; season with basil, garlic powder, and salt. Toss gently. Serve with pita chips for scooping. Best in the first few days when tomatoes are fresh.
