PRE-TRIP PREP: Freeze pork chops seasoned with herb blend.
ON THE RIVER: Heat olive oil in a large skillet; sear thawed pork chops over medium-high heat 4–5 min per side until cooked through (145°F). Meanwhile, bring water to a boil in a pot; add butter and stuffing mix. Remove from heat, stir, cover, and let stand 5 minutes; fluff with fork. Heat green beans in a small pot. Serve chops with stuffing, green beans, and applesauce.
