Recipe Instructions

PRE-TRIP PREP: Freeze ground turkey.

ON THE RIVER: Heat olive oil in a large pot; brown thawed turkey with onion. Drain excess fat. Add white beans, green chilies, broth, cumin, and oregano. Simmer 20 minutes. Meanwhile, make quesadillas: heat a dry skillet; fill tortillas with shredded cheddar; fold and cook 2–3 minutes per side until golden and cheese melts. Serve chili topped with sour cream, Monterey Jack, cilantro, and a squeeze of lime, with quesadillas on the side.
