PRE-TRIP PREP (MAKE AHEAD): Brown ground beef with onion and garlic; drain fat. Add corn, peas, Worcestershire, tomato paste, broth, thyme, and salt; simmer 10 minutes. Cool and freeze in large zip-lock bags.
ON THE RIVER: Thaw beef mixture in cooler day before. Heat in a pot over medium heat until bubbling. Meanwhile prepare mashed potatoes per package directions with butter and milk. Serve beef mixture in bowls topped with a generous scoop of mashed potatoes.
