PRE-TRIP PREP: Freeze pork chops seasoned with herb blend for extra flavor.
ON THE RIVER: Heat oil in a cast iron skillet over medium-high heat. Season thawed chops; sear 4–5 minutes per side until internal temp reaches 145°F. Rest 3 minutes. Meanwhile, heat water in a pot; stir in instant potato flakes, butter, and milk until creamy; season with salt. Drain and heat green beans in a small pot. Serve chops over mashed potatoes with green beans and applesauce on the side.
