PRE-TRIP PREP: Marinate chicken in herb & garlic marinade and olive oil before freezing for extra flavor. Dice zucchini and squash; store in cooler.
ON THE RIVER: Cook orzo in chicken broth per package directions. In last 5 minutes, add zucchini, squash, and cherry tomatoes; stir until tender. Stir in parmesan, parsley, and lemon juice. Grill or pan-sear thawed chicken in oiled skillet over medium-high heat, 6–7 minutes per side. Slice and serve over veggie orzo.
