PRE-TRIP PREP: Freeze chicken and cooked rice in separate bags.
ON THE RIVER: Heat oil in a skillet; cook thawed chicken with onion and taco seasoning until done, about 10 minutes. Shred or dice chicken. Warm rice, black beans, and corn in separate pans. Set out burrito bar with all toppings. Warm tortillas on a dry skillet. Guests assemble their own burritos.
